About this time last year we had an Enrichment night on how to make raw granola and healthy smoothies. I have finally gotten around to making said raw granola and I'm in love! Breakfast is the hardest meal of the day for me. The milk in cereal makes me sick first thing in the morning, I don't really like oatmeal, and I can very well make pancakes every morning. This granola is healthy and it doesn't make me feel yucky first thing in the morning.
Raw Granola by Charlene Higley
1 cup raw almonds
soak the almonds for 8 hours or overnight, they almost double in size and improve the
nutritional value.
Rinse and drain almonds
Place in food processor, pulse off and on until ground up.
Add 1-2 Tbsp olive oil and 1-2 Tbsp honey.
Add about 12 Zahidi dates cut up.
Pulse off and on until a sticky dough forms.
Place dough in a large bowl and add:
1 cup chopped raw nuts like walnuts, cashews, pecans, etc.
1/2 cup chopped dates, raisons, or any dried fruit. (I like cranberries!)
Mix well with a large spoon.
Add 3 cups rolled oats, adding 1/2 cup at a time. If it's getting dry use only 2 1/2 cups oats.
Store in the refridgerator in a plastic bag.
Serving suggestion:1/2 cup granola with yogurt and berries, bananas or fresh peaches.
This can be dehydrated at 140 degrees or less to preserve enzymes. it can also be toasted but this will destroy the food enzymes.
Other suggestions:
Grate a peeled apple and add it along with 2 tsp. of cinnamon to dough. Use dried apple for the dried fruit.
Add flaked coconut to granola.
